Veggie Breakfast Casserole

A great option for the vegetarians in your life, this egg casserole uses sweet and bright flavors from onion, cherry tomatoes, and bell pepper. Since most vegetables are 0-point foods, you can mix and match veggies depending on the season! For a low-fat cheese option, go with mozzarella, which also just happens to be one of the best melting cheeses. For a casserole that serves four, expect it to take a total of 40 minutes.

Ingredients:

  • 6 whole eggs
  • ¼ cup mozzarella
  • ½ cup chopped onion
  • ¼ cup halved cherry tomatoes
  • ½ chopped bell pepper
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning

Instructions:
1. Grease a baking dish.
2. Preheat your oven to 350-degrees.
3. Whisk eggs into a bowl, and add the rest of the ingredients, giving it a good stir.
4. Pour into your prepared baking dish.
