Olive Oil Ice Cream





Preparation time: 3 hours and 10 minutes
Cooking time: 20 minutes
Servings: 4

Ingredients:

  • 1/3 cup sugar
  • 3 cups half-and-half
  • 3 egg yolks
  • 1 tablespoon vanilla extract
  • ¼ cup olive oil
  • 1 teaspoon lemon zest, grated


Directions:
1.  Pour the half-and-half and the vanilla into a pot, bring to a simmer over medium heat, cook for 14 minutes, and strain into another pot.
2.  In a bowl, mix the egg yolks with the sugar and whisk well.
3.  Add 1 cup of half-and-half mix and whisk well.
4.  Add this over the remaining half and half mix, return the pot to medium heat and cook for 3-4 minutes.
5.  Strain this into a bowl, add the oil and the lemon zest, whisk, cool down and keep in the freezer for 2 hours.
6.  Transfer to your ice cream machine and process according to the instructions before serving.
