Great Avocado Ice Cream

Servings: 8

Ingredients:

  • 4 avocados, peeled and pitted
  • 1 cup lime juice
  • 1 cup maple syrup
  • Zest of 2 limes, grated
  • 20 ounces coconut cream
  • 2 teaspoons vanilla extract
  • 2 tablespoons coconut oil, melted


Directions:
1.  In a blender, mix the avocados with the lime juice, maple syrup, lime zest, cream, vanilla and the oil and pulse well.
2.  Transfer this to a loaf pan and freeze for 3 hours before serving.
