Microwave Cheesy Bacon Egg Grits

Don’t underestimate the convenience of the microwave. Mornings can be the busiest time of the day, and it’s tempting to just skip that first meal, or settle for something with too many points. These grits for two use quick-cooking packets of Quaker grits, and nutritional yeast, which adds a cheesy flavor without the fat. Using fat-free ricotta cheese also keeps the points down. After microwaving and stirring two times, the grits sit for a little while to thicken up.

Ingredients:

  • 2 tablespoons ricotta cheese (fat-free)
  • 1 whole egg
  • ¼ cup egg whites
  • 2 tablespoons nutritional yeast
  • 2 tablespoons crumbled bacon
  • Salt to taste
  • Black pepper to taste
  • 8-ounces hot water
  • 2 packets Quaker cheese grits

Instructions:
1. Grease a bowl that’s safe for the microwave.
2. Mix in the all the ingredients minus hot water and grits.
3. Microwave for 1 minute.
4. Stir, then microwave for another 1 minute.
5. Add grits, and then pour over the hot water.
6. Stir until the grits are evenly moistened, then wait 2 minutes.
7. Stir once more, and then serve!
