With mushrooms cooked with the chicken, this is practically a one-pot meal with only 1 WW Freestyle point. The meat is seasoned with just Italian seasoning, salt, and black pepper. Mushrooms and garlic add more flavor, while the deglazing liquid of stock and balsamic vinegar bring everything
together. You’ll think you’re in Tuscany or Florence while eating this meal!
- 1 ⅓ pounds boneless skinless chicken breasts
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 teaspoons extra-virgin olive oil
- 8-ounces sliced mushrooms
- 3 minced garlic cloves
- ½ cup chicken stock
- 2 ½ tablespoons good balsamic vinegar
Instructions:
1. Season your chicken with Italian seasoning, salt, and pepper.
2. Pour oil into a skillet, and heat on medium-high.
3. When hot, add chicken and cook for just 2-3 minutes per side.
4. Plate for now.
5. Add mushrooms and garlic into the hot skillet, and stir for 3-4 minutes until mushrooms are softening.
6. Pour in chicken stock and balsamic vinegar, deglazing by scraping up any burnt-on food bits.
7. Return the chicken to the skillet, and simmer on low for 10-15 minutes, until the chicken is 165-degrees.
8. Serve!
