If you don’t have a grill, you don’t have to miss out on awesome chicken kebabs. You can use the oven! The marinade is simple and flavorful. It’s just parsley, lime juice, oil, garlic, salt, and taco seasoning. You can marinate cubed chicken in this for just 30 minutes, though overnight will really make the meat flavorful. Assemble your kebabs with the chicken and some veggies (this recipe uses bell pepper, onion, and cherry tomatoes), and bake on a flat cookie sheet for a total of 10 minutes under the broil. One kabab is just 2 points!

Ingredients:
- ¼ cup fresh parsley
- 2 lime’s worth of juice
- 2 tablespoons extra-virgin olive oil
- 3 minced garlic cloves
- 1 teaspoon salt
- 1 teaspoon taco seasoning
- 1 ⅓ pounds boneless chicken breasts
- 2 yellow chopped bell peppers (into chunks)
- Handful of cherry tomatoes
- 1 chopped onion (into chunks)
Instructions:
1. Put parsley, lime juice, oil, garlic, salt, and taco seasoning into a blender and process until you get a smooth marinade.
2. Cube your chicken, and then shake in a bag with the marinade.
3. Store in the fridge for at least 30 minutes.
4. To cook in the oven, turn on the broiler.
5. Skewer the marinated chicken, bell pepper chunks, cherry tomatoes, and chunks of onion.
6. Put kebabs on a baking sheet and broil for 5 minutes, flip over, and then broil for another 5 minutes.
7. Make sure chicken has reached 165-degrees.
8. Serve!
