Quick Lemon-Raspberry Oats

Time: 2 ½ minutes

Want oatmeal, but don’t have 25-30 minutes to make it on the stove? Use the
microwave! With just 2 points, this is a great breakfast that won’t taste bland.
Lemon zest adds a fragrant zing, while frozen raspberries give you sweetness
without extra points. If you want a sweeter bite, you can use stevia, but I’ve
found that the fruit and lemon zest are all I need.

Ingredients:

  • 6 tablespoons quick oats
  • 1 cup unsweetened vanilla almond milk
  • ½ cup frozen raspberries
  • 1 teaspoon lemon zest
  • Stevia to taste


Instructions:
1. combine all the ingredients during a microwave-safe bowl.
2. Microwave for 2 minutes.
3. Stir well.
4. Serve!
